Grey Gables wouldn't need the internet for their internal bookings management, nor for communication between restaurant and kitchen. All would be done on a local network.

Whereas I can understand it being a problem for old people etc, to have no phones, certainly business users can use smart phones and also simply attach a 3G data stick to their computer or router and go online that way in the office. They only cost a few pounds and would get them back online immediately. I am surprised such an obvious solution is being missed by all these businessmen (and the scriptwriters).

Re 3. Try using a 3G or any other phone based "stick" or dongle in my rural area. No signal. Plenty of 3G in the cities of course. Re 1. A lot of restaurants etc. now wastefully use tools like Skype, which utilise the net to communicate within the same building so they would be knocked out.
